Chewy Double Chocolate Cookies

Bear with me while I fiddle with the layout!

  • 225g butter, unsalted
  • 190g golden caster sugar
  • 150g dark brown sugar
  • 2 eggs
  • 140g cocoa powder
  • 180g all-purpose flour
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 150g white chocolate, chopped

Leave butter out at room temperature to soften; or, if you’re impatient, bung it in the microwave in 10 second-intervals on the lowest setting until it reaches a splodgy consistency. Meanwhile, sift flour, salt, baking powder, and cocoa powder together in a separate bowl. Add the eggs and vanilla to the creamed butter and beat until the mixture looks fairly homogeneous; don’t worry if it looks grainy at this point. Mix the dry ingredients with the wet, adding a little at a time so your counter-top won’t be covered in a cloud of flour, taking care not to over-mix. Tip in the chopped white chocolate and stir. It’ll be tough to stir, but work those muscles until they’re distributed fairly evenly.

Drop table-spoon sized balls onto a baking sheet, either greased or covered with parchment paper. Bake at 175C for 7-10 minutes depending on the texture you prefer.

Makes 35-40 small cookies (roughly one tablespoon of dough), or 20 large ones. Ridiculously chewy and addictive.

(Please don’t do what I initially did and start chopping the chocolate on an unwashed chopping board that had been previously used to cut up cabbage. Cabbage-chocolate cookies, while culinarily exciting, probably doesn’t appeal to the tastebuds so much.)





These have lasted about three days. Look at the interior! They were so moist!
